How the 16 get picked
Nomination counts stay hidden while the board is open, so nothing is decided before the bracket starts and no place is publicly ranked below another. When nominations close we pick the line-up from the most-nominated, spread across London rather than all from one postcode, and with a mix of styles and prices. Every one has to agree to take part. If somewhere obvious is missing, it either wasn't nominated enough, asked to sit this one out, or we're saving it for the next round.
